Strawberry and Spinach Salad

New week, new simple salad recipe coming your way! This strawberry and spinach salad is packed with flavor and makes the perfect side dish. The pecans, feta and balsamic vinaigrette dressing add the perfect punch of flavor, and it comes together SO easily. 

Prepare the salad dressing by combining all of the ingredients in a small bowl and mixing well.

Add the salad ingredients to a large bowl and pour the dressing over the top of the salad. Mix to combine.

Ingredients

For the Salad:

  • 4 Cups Spinach or Spinach and Arugula Mix
  • 1/3 Cup Pecans chopped
  • 1/3 Cup Feta
  • 1/4 Cup Red Onion sliced
  • 1 Cup Strawberries sliced

For the Salad Dressing:

  • 1/2 Cup Olive Oil
  • 1/4 Cup Balsamic Vinegar
  • 2 tsp Honey
  • 1 tsp Dijon Mustard
  • 1 tsp Garlic minced
  • Salt and Pepper to taste

Instructions

  • Prepare the salad dressing by combining all of the ingredients in a small bowl and mixing well.
  • Add the salad ingredients to a large bowl and pour the dressing over the top of the salad. Mix to combine.
