Instant Pot Mexican Rice

Today I’m back with one of my most popular recipes! I’ll be sharing the easiest way to make Instant Pot Mexican Rice. This will rival your favorite local restaurant’s rice and you’ll never buy it from the store again.

For this recipe, you’ll need an Instant Pot or Pressure Cooker. You can find my favorite Instant Pot by clicking here! 

To start out, you’ll want to dice the onion and mince the garlic.

Turn the Instant Pot to sauté mode and add two tablespoons of olive oil or butter. Allow it to heat up before adding the chopped onions and garlic.

Then, add the rice and sauté for 5 minutes.

Instant Pot Mexican Rice

Add the remaining ingredients and stir.

You will then cook the rice on high pressure for 4 minutes.

 

When the timer is up, allow the pressure to release naturally for 10 minutes before quickly releasing the pressure.

Serve the Instant Pot Mexican rice with your favorite Mexican dish. It’s a great side for these Crunchwrap Supremes!

Equipment

  • Instant Pot or Pressure Cooker

Ingredients

  • 1 Cup White Rice basmati is my favorite
  • 1 1/2 Cup Vegetable Broth can sub chicken broth
  • 1 Can Tomato Sauce 8 oz
  • 1/4 Cup Onion diced
  • 3 cloves Garlic minced
  • 2 TBSP Olive oil or Butter
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 1 tsp Cumin

Instructions

  • Dice the onion and mince the garlic.
  • Turn the Instant Pot to sauté mode and add two tablespoons of olive oil or butter. Allow it to heat up before adding the chopped onions and garlic.
  • Add the rice and sauté for 5 minutes.
  • Add the remaining ingredients and stir.
  • Cook on high pressure for 4 minutes.
  • When the timer is up, allow the pressure to release naturally for 10 minutes before quickly releasing the pressure.
  • Serve the rice with your favorite Mexican dish.
