
It’s soup season, which means I’ll be sharing some more of my favorite soup recipes. This rich and velvety creamy tomato basil soup is the ultimate comfort food. Whether served as a cozy appetizer or a hearty meal, this soup is a warm, satisfying dish that pairs wonderfully with a crispy grilled cheese sandwich or a slice of rustic bread. It’s a quick, delicious and filling soup that is the perfect weeknight meal.
You’ll need a large pot or Dutch oven and an immersion blender for this recipe.
The first step in this recipe is to heat a Dutch oven over medium heat, then add the olive oil and allow it to heat up.
Next, add the onions and sauté for two to three minutes before adding the garlic and cooking for another minute until fragrant.

Add the remaining ingredients except for the heavy cream and fresh basil, then stir well.
Allow the soup to simmer for 15 minutes, then use an immersion blender to blend the soup until it’s smooth.

Add the heavy cream and fresh basil to the soup. Allow the soup to heat for another 3-5 minutes before serving.
