
This week’s brand-new recipe is packed full of vegetables and incredible flavor! If you’re looking for a way to get more vegetables in your diet, this recipe is for you. You can toss in some protein if you’re feeling the need, but this easy vegetable stir fry is super filling as it is. Feel free to mix up the vegetables, but our favorites include zucchini, broccoli, asparagus and red bell pepper.
To make this easy vegetable stir fry, you’ll need:
- Vegetables (broccoli, zucchini, asparagus and bell peppers work perfectly!)
- Garlic
- Brown Sugar
- Soy Sauce
- Sesame Oil
- Siracha
- Ginger
- Green Onions
- Sesame Seeds
- Cooked Rice or Quinoa for serving
Start by chopping the vegetables, then combine all of the ingredients for the sauce into a bowl and mix well.
Preheat a large skillet over medium-high heat. Add 1 TBSP of sesame oil to the pan, then add the vegetables and sautƩ for 2-3 minutes.

Add the sauce mixture and reduce the heat to medium. Allow the mixture to simmer for 5-10 minutes.

Serve this easy vegetable stir fry over rice or quinoa and top with green onions and sesame seeds.

You can double the recipe to have extra for lunches; it makes the perfect weekly meal prep!
