
Let’s taco-bout tacos! Who says you have to skip taco Tuesday if you’re a vegetarian? In fact, I think choosing meatless recipes can make taco Tuesday even better! These easy vegetable tacos will certainly confirm that statement. We got a random May snowstorm in Colorado last week, and these tacos were so comforting and delicious. These tacos are vegetarian and vegan friendly but can also be used for a meatless Monday for you meat eaters! They’re easy to personalize and packed with flavor.
To make these easy vegetable tacos, you’ll need:
- Bell Peppers (Red, Green and Yellow)
- Zucchini
- Onion
- Seasonings (Cumin, Chili Powder, Onion and Garlic Powder, Salt/Pepper)

This recipe includes homemade guacamole that is super simple to make. To a large bowl, add 4-5 avocados and mash. Then, add the cilantro, lime juice and salt and mix well.

To prepare the easy vegetable tacos, preheat the oven to 350 degrees and chop the vegetables. Then add the vegetables to a large bowl and toss with the olive oil and seasonings.
Preheat a large skillet over medium heat, add the vegetables and sauté for 10-15 minutes or until cooked through.

While the vegetables are cooking, heat corn tortillas for 3-5 minutes in the preheated oven.
To each corn tortilla, spread guacamole, then top with the cooked vegetables and any toppings of your choice.


Serve these easy vegetable tacos immediately and enjoy!

Easy Vegetable Tacos
Ingredients
For the Vegetable Tacos:
- 1/2 Cup Onion diced
- 1 Red Bell Pepper diced
- 1 Yellow Bell Pepper diced
- 1 Green Bell Pepper diced
- 1 Zucchini diced
- 1/2 tsp Cumin
- 1/2 tsp Chili Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1-2 TBSP Olive Oil
- Corn Tortillas for serving
For the Guacamole:
- 4-5 Avocados mashed
- 2 TBSP Lime Juice
- 2-3 TBSP Cilantro chopped
- Salt to taste
Instructions
To Prepare the Guacamole:
- To a large bowl, add the avocado and mash. Then, add the cilantro, lime juice and salt and mix well.
To Prepare the Vegetable Tacos:
- Preheat the oven to 350 degrees.
- Dice the vegetables.
- Add the diced vegetables to a large bowl and toss with the olive oil and seasonings.
- Preheat a large skillet over medium heat, add the vegetables and sauté for 10-15 minutes or until cooked through.
- While the vegetables are cooking, heat corn tortillas for 3-5 minutes in the preheated oven.
- To each corn tortilla, spread guacamole, then top with the cooked vegetables and any toppings of your choice.
