Zucchini Fritters

Sometimes you just need a healthy and easy lunch to make. These zucchini fritters are absolutely delicious and so simple to make. They come together in no time and they’re packed with flavor. To make the fritters, you’ll need just a few ingredients:

  • 2 Medium Zucchinis
  • 1 Egg
  • Flour
  • Parmesan Cheese
  • Garlic
  • Salt/Pepper
  • Olive Oil for Frying

To make the zucchini fritters:

Grate the zucchini, sprinkle with salt and place into a colander to drain for about 20 minutes. Then, squeeze to remove the excess moisture. Add the grated zucchini, flour, parmesan, egg and black pepper to a large bowl and mix well.

To cook the zucchini fritters, heat a large pan over medium heat and then add the olive oil. Drop spoonfuls (about a 1/4 cup each) of the mixture into the pan and cook for 3-4 minutes per side.

Place the zucchini fritters on a paper towel to drain the excess oil and serve with your choice of dipping sauce. I love to serve these with my secret sauce!Ā
