- Dice the onion and mince the garlic.
- Turn the Instant Pot to sauté mode and add two tablespoons of olive oil or butter. Allow it to heat up before adding the chopped onions and garlic.
- Add the rice and sauté for 5 minutes.
- Add the remaining ingredients and stir.
- Cook on high pressure for 4 minutes.
- When the timer is up, allow the pressure to release naturally for 10 minutes before quickly releasing the pressure.
- Serve the rice with your favorite Mexican dish.
