Instant Pot Mexican Rice

The easiest way to make perfect Instant Pot Mexican Rice.

Ingredients
  

  • 1 Cup White Rice basmati is my favorite
  • 1 1/2 Cup Vegetable Broth can sub chicken broth
  • 1 Can Tomato Sauce 8 oz
  • 1/4 Cup Onion diced
  • 3 cloves Garlic minced
  • 2 TBSP Olive oil or Butter
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 1 tsp Cumin

Equipment

  • Instant Pot or Pressure Cooker

Method
 

  1. Dice the onion and mince the garlic.
  2. Turn the Instant Pot to sauté mode and add two tablespoons of olive oil or butter. Allow it to heat up before adding the chopped onions and garlic.
  3. Add the rice and sauté for 5 minutes.
  4. Add the remaining ingredients and stir.
  5. Cook on high pressure for 4 minutes.
  6. When the timer is up, allow the pressure to release naturally for 10 minutes before quickly releasing the pressure.
  7. Serve the rice with your favorite Mexican dish.
