
If you know me, then you know I’m a vegetarian… but my kids aren’t. I’m always trying to find meals that I can adjust to fit both of our dietary needs, and these easy sheet pan sweet potato fajitas are the perfect thing! I substitute chicken for theirs while using sweet potatoes for mine and everyone is happy! I absolutely love a savory sweet potato, and I think you’ll love these too. For this recipe you’ll need:
- 2 medium sweet potatoes
- Bell peppers: red, green and yellow bell peppers work perfectly
- 1 red onion
- Corn tortillas
- Toppings of your choice – we love avocado, sour cream, cilantro, green onions and hot sauce
- 1-2 sheet pans
To Make the Easy Sheet Pan Sweet Potato Fajitas:
Preheat the oven to 375 degrees. While the oven is preheating, add the olive oil and seasonings to a large bowl and mix well. Then add the diced sweet potatoes, bell peppers and red onion and toss to combine.

Spray a sheet pan with cooking spray, then add the sweet potatoes, bell peppers and red onions.Ā

Bake for 25 minutes at 375 degrees. Add the corn tortillas to another sheet pan and place into the oven for the last 5 minutes of cooking to warm.

Top each corn tortillas with sweet potatoes, fajita vegetables and toppings of choice and serve.Ā
