
One of my favorite meals growing up was beef enchiladas and it continues to be my favorite meal now that I have perfected my own recipe. What makes it so special? It has to be the addition of my homemade enchilada sauce! Enchiladas can be a time-consuming task, but I promise, these beef enchiladas are SO worth it.
How to make Beef Enchiladas
Start by pre-heating the oven to 350 degrees. Then, preheat a large skillet over medium heat and add a few tablespoons of olive oil.
To the skillet, add 1/2 of the diced onions and sauté for 2-3 minutes before adding the garlic and ground beef. Add the seasonings (including salt, pepper, onion powder, garlic powder, cumin and chili powder) and continue to cook until the beef is brown and cooked through.
Now it’s time to roll the enchiladas! Grease a baking dish and pour 1/2 cup of enchilada sauce into the bottom of the dish. Wrap the tortillas in a wet paper towel and microwave for 2 minutes. This makes the tortillas soft and easy to work with.

To each tortilla, add 2 tbsp of ground beef and 1 tbsp of shredded cheese.

Roll the tortilla into a tube and place into the baking dish. Continue until all tortillas have been used.

Top the enchiladas with enchilada sauce, cheese and diced onions. Cover the baking dish with aluminum foil and bake at 350 degrees for 20 minutes. When the 20 minutes are up, remove the aluminum foil and bake for another 5 minutes.

Top the beef enchiladas with cilantro if desired and serve.

Serve the enchiladas with your favorite side- we love to have them with Mexican rice.
