Ingredients

  • 3 Cups Enchilada Sauce
  • 20 Corn Tortillas
  • 1 lb Ground Beef
  • 1 Cup Onion diced
  • 2 Cloves Garlic minced
  • 2 Cups Cheddar Cheese shredded
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Chili Powder
  • 2 TBSP Olive Oil
  • 1 TBSP Cilantro chopped

Instructions

  • Preheat the oven to 350 degrees.
  • Preheat a large skillet over medium heat and add the olive oil.
  • To the skillet, add 1/2 of the diced onions and sauté for 2-3 minutes before adding the garlic and ground beef.
  • Add the seasonings and continue to cook until the beef is brown and cooked through.
  • Grease a baking dish and pour 1/2 cup of enchilada sauce into the bottom of the dish.
  • Wrap the tortillas in a wet paper towel and microwave for 2 minutes. This makes the tortillas soft and easy to work with.
  • To each tortilla, add 2 tbsp of ground beef and 1 tbsp of shredded cheese.
  • Roll the tortilla into a tube and place into the baking dish. Continue until all tortillas have been used.
  • Top the enchiladas with enchilada sauce, cheese and diced onions.
  • Cover the baking dish with aluminum foil and bake at 350 degrees for 20 minutes.
  • Remove the aluminum foil and bake for another 5 minutes.
  • Top the beef enchiladas with cilantro if desired and serve.
