Beef Enchiladas

A classic recipe for beef enchiladas made with the best homemade enchilada sauce around.

Ingredients
  

  • 3 Cups Enchilada Sauce
  • 20 Corn Tortillas
  • 1 lb Ground Beef
  • 1 Cup Onion diced
  • 2 Cloves Garlic minced
  • 2 Cups Cheddar Cheese shredded
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Chili Powder
  • 2 TBSP Olive Oil
  • 1 TBSP Cilantro chopped

Method
 

  1. Preheat the oven to 350 degrees.
  2. Preheat a large skillet over medium heat and add the olive oil.
  3. To the skillet, add 1/2 of the diced onions and sauté for 2-3 minutes before adding the garlic and ground beef.
  4. Add the seasonings and continue to cook until the beef is brown and cooked through.
  5. Grease a baking dish and pour 1/2 cup of enchilada sauce into the bottom of the dish.
  6. Wrap the tortillas in a wet paper towel and microwave for 2 minutes. This makes the tortillas soft and easy to work with.
  7. To each tortilla, add 2 tbsp of ground beef and 1 tbsp of shredded cheese.
  8. Roll the tortilla into a tube and place into the baking dish. Continue until all tortillas have been used.
  9. Top the enchiladas with enchilada sauce, cheese and diced onions.
  10. Cover the baking dish with aluminum foil and bake at 350 degrees for 20 minutes.
  11. Remove the aluminum foil and bake for another 5 minutes.
  12. Top the beef enchiladas with cilantro if desired and serve.
