Today I’m excited to share one of the only mac and cheese recipes that the cheese-hater in my family will eat! This simple recipe is perfect to throw together on a busy weeknight and it is absolutely delicious!

For this recipe, you can use any type of dry pasta that you like. On this night, I used a box of shells, and I loved the way they held the cheese sauce. Start out by preparing the pasta according to the instructions on the box.

While the pasta is cooking, melt the butter in a large saucepan. Add the flour and cook for 1-2 minutes.

Next, add the milk, hot sauce and seasonings and bring to a simmer. Carefully fold in the cheese one cup at a time, stirring constantly. (Fold in the cheese, David!) By folding in, I just mean mix it together.

When the pasta has finished cooking, drain the water and pour the cheese sauce over the cooked pasta.

Ingredients
  

  • 1 lb Dried Pasta macaroni or shells
  • 1/4 Cup Flour
  • 1/4 Cup Butter
  • 3 1/2 Cups Whole Milk
  • 4 Cups Cheddar Cheese shredded
  • 1/2 Cup Mozzarella Cheese shredded
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Paprika
  • 1 tsp Hot Sauce

Method
 

  1. Prepare the pasta according to the instructions on the box.
