
If you’re anything like me, then this time of year, you’re always searching for something warm and comforting. Well, this this rich and savory Crock Pot Beef Ragu is just that. This recipe comes together so easily in the crock pot and is the perfect meal for a busy weeknight or a lazy weekend where you just want to stay in the house and eat all of the things. My sons loved this recipe, and I served it over my homemade pasta which was the perfect combination.
To start out, you’ll want to dice your vegetables including the carrots, celery, onion and garlic. It’s a good time to also chop the fresh herbs so you don’t have to worry about them later.
Season the beef roast well with salt and pepper, then heat a large pan over medium before adding olive oil to the pan. Sear the beef roast on all sides until brown; 2-3 minutes per side. Remove the roast and set aside.
To the pan where you seared the meat, add the onions, carrots and celery and sauté for 2-3 minutes. Add the garlic as well as the remaining ingredients aside from the beef and allow the mixture to simmer for 3-5 minutes.

Add all of the ingredients to a crock pot and cook on low heat for 8 hours.

Shred the beef then return it to the crock pot and serve over pasta or mashed potatoes.

We like to enjoy this crock pot beef ragu with my homemade pasta, but any pasta will do!
