Season the beef roast well with salt and pepper.
Heat a skillet over medium and add the olive oil.
Sear the beef roast on all sides until brown; 2-3 minutes per side.
Remove the roast and set aside.
To the pan where you seared the meat, add the onions, carrots and celery and sauté for 2-3 minutes. Add the garlic as well as the remaining ingredients aside from the beef and allow the mixture to simmer for 3-5 minutes.
Add all of the ingredients to a crock pot and cook on low heat for 8 hours.
Shred the beef then return it to the crock pot and serve over pasta or mashed potatoes.
