Crock Pot Beef Ragu

Ingredients
  

  • 2 lb Beef Roast
  • 1/2 Cup Onion diced
  • 1/2 Cup Carrots diced
  • 1/2 Cup Celery diced
  • 3 Cloves Garlic Minced
  • 1 14 oz can Diced Tomatoes
  • 1 1/2 Cup Chicken or Beef Broth
  • 1/2 Cup Red Wine can use cooking wine
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 TBSP Fresh Rosemary
  • 1 TBSP Fresh Thyme
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 TBSP Olive Oil
  • Pasta for serving

Method
 

  1. Season the beef roast well with salt and pepper.
  2. Heat a skillet over medium and add the olive oil.
  3. Sear the beef roast on all sides until brown; 2-3 minutes per side.
  4. Remove the roast and set aside.
  5. To the pan where you seared the meat, add the onions, carrots and celery and sauté for 2-3 minutes. Add the garlic as well as the remaining ingredients aside from the beef and allow the mixture to simmer for 3-5 minutes.
  6. Add all of the ingredients to a crock pot and cook on low heat for 8 hours.
  7. Shred the beef then return it to the crock pot and serve over pasta or mashed potatoes.
