Creamy Tuscan Chicken Pasta

Today I’m bringing you one of my absolute favorite recipes. This Creamy Tuscan Chicken Pasta recipe is one of our favorite weeknight meals. It’s full of flavor, simple to make and kid approved – my kids love it! This recipe comes together really easily, and you can serve it over your choice of pasta. 

To start out, cook the pasta according to the instructions on the package. Then, slice the chicken breasts and season with salt, pepper and Italian seasoning. 

Cook the chicken in a pan over medium-high heat until fully cooked then set aside.

To the same pan you cooked the chicken in, add the butter and oil from the sun-dried tomatoes and allow the butter to melt. When the butter has melted, add the flour and cook for 1-2 minutes.

Add the chicken broth, heavy cream and sundried tomatoes to the pan. Stir well and season to taste.

Creamy Tuscan Chicken Pasta

Allow the sauce to thicken for 4-5 minutes before adding the spinach and chicken.

Ingredients
  

  • 2 lbs. Chicken Breasts thinly sliced
  • 1 Cup Spinach
  • 1/4 Cup Sundried Tomatoes chopped
  • 3 Cups Chicken Broth
  • 1/2 Cup Heavy Cream
  • 3 TBSP Butter melted
  • 3 TBSP Flour
  • 2 TBSP Sundried Tomato Oil
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Italian Seasoning
  • 1 lb Pasta of your choice
