You’re not going to want to miss today’s recipe. This Possum Pie recipe is one of my new favorites. It got high praise from my sons, and I know you will LOVE it. This pie has a graham cracker crust, and three layers of flavorful goodness for you to enjoy. The possum pie doesn’t need to be baked, so it comes together so easily!
To prepare the graham cracker crust:
Add the graham crackers to a food processor or a ziploc bag and crush into crumbs.
Melt the butter and combine with the graham cracker crumbs.
Press the graham cracker mixture into a greased pie dish. Spread evenly into the pan, pressing down with a spoon or small glass.
Place the pie dish into the freezer while you prepare the cream cheese layer.

To prepare the Cream Cheese Layer:
Combine the cream cheese, sugar, vanilla, and heavy cream into a large bowl and mix using a hand mixer.

Pour the cream cheese mixture into the pie dish and spread evenly over the graham cracker crust.

Place the pie dish into the refrigerator for about 30 minutes while you prepare the next layer.
To prepare the Chocolate Pudding Layer:
In a large saucepan, add the heavy cream, chocolate chips and pudding mix and heat over medium. Stir continuously until the chocolate has melted and the mixture has thickened.

Pour the pudding mixture into the pie dish, spreading evenly over the cream cheese mixture.

Place the pie dish into the refrigerator for about 30 minutes while you prepare the next layer.
To prepare the Whipped Cream Layer:
Spread the whipped cream over the pudding layer, spreading it evenly. Top with chocolate chips or chocolate shreds.

Place the pie into the refrigerator to chill for 1-2 hours or until ready to serve.
