Pineapple Fried Rice

Today I’m bringing you one of my favorite recipes. Pineapple fried rice is the perfect combination of sweet and savory. It’s so easy to make and comes together really easily using leftover rice that you might already have on file.

To start out, heat a large pan over medium heat and add the sesame oil, bell pepper, frozen peas and carrots, onions and garlic. Sauté for 2-3 minutes.

Add the soy sauce, salt and pepper, eggs, pineapple and the cooked rice. Mix well.

Top the pineapple fried rice with more green onions and sesame seeds before serving.

Ingredients
  

  • 4 Cups Cooked Rice
  • 3 Cloves Garlic minced
  • 1 Red Bell Pepper diced
  • 1 Cup Peas and Carrots frozen
  • 1 Cup Pineapple diced
  • 2 Eggs scrambled
  • 1/4 Cup Green onions sliced
  • 1 TBSP Sesame Oil
  • 2 TBSP Soy Sauce
  • 1/2 tsp Black Pepper
  • 1/4 tsp Salt
  • Sesame Seeds for serving

Method
