Ohhhh boy. I am SO excited to share this recipe with you! As a vegetarian, I am always looking for new healthy salad recipes with some tang and a twist… and this Spinach and Blackberry Salad has both! The salad is SO flavorful and the Blackberry Vinaigrette that I’ve paired with it has everything you need.

To prepare the Blackberry Vinaigrette, you’ll combine all of the ingredients into a blender or food processor and blend well. If you find that the dressing is too thick, add 1 tablespoon of cold water at a time.

To Prepare the salad, add the spinach, chopped kale and basil to a large serving plate or bowl.Ā 

Then, add the feta and pecans then drizzle the blackberry vinaigrette over the salad.

Ingredients
  

For the Blackberry Vinaigrette:
  • 1 Cup Blackberries
  • 2 TBSP Apple Cider Vinegar
  • 2 TBSP Honey
  • 1 TBSP Dijon Mustard
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 TBPS Fresh Basil minced
  • 1/4 Cup Olive Oil
  • Salt and Pepper to taste
For the Salad:
  • 4 Cups Spinach
  • 1 Cup Kale destemmed and chopped
  • 1/4 Cup Fresh Basil
  • 1 Cup Blackberries
  • 1/2 Cup Feta Cheese
  • 1/3 Cup Pecans chopped

Method
 

To Prepare the Blackberry Vinaigrette:
  1. Combine all of the ingredients for the vinaigrette into a blender or a food processor and blend until combined.
  2. Add water 1 tablespoon as a time if the dressing is too thick.
To Prepare the Salad:
  1. Add the spinach, chopped kale and basil to a large serving plate or bowl.
  2. Add the feta and pecans then drizzle the blackberry vinaigrette over the salad.
