Sweet Potato Egg Cups

I’m back today with a simple and healthy breakfast recipe that’s easy to meal prep and the whole family will enjoy! These Sweet Potato Egg cups are so filling and simple to make. You’ll need a muffin pan for this recipe, and a food processor is super helpful but optional.

Start out by preheating the oven to 375 degrees.

Grate the sweet potato (I like to use my food processor for this part) and add to a bowl along with the salt, pepper, onion powder, garlic powder, chives and cheese. Stir to combine.

Grease the muffin pan then add about 1/4 cup of the mixture to each of the muffin tins. Press the mixture into the pan and up along the sides.

Place the pan into the oven and bake for 8-9 minutes. When the time is up, remove the pan from the oven and crack an egg into the sweet potato cup.

Return the pan to the oven and bake the sweet potato egg cups for 12-14 minutes.

Top with more parmesan, black pepper and chives and serve.

Ingredients
  

  • 1 Sweet Potato large
  • 6 Eggs
  • 2 tsp Chives chopped
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 Cup Parmesan Cheese plus more for topping

Equipment

  • 1 6 Cup- Muffin Pan
