Loaded Baked Potato Bites

Hello everyone! Happy Thursday! I cannot wait for you to try this recipe. These loaded baked potato bites are absolutely delicious and SO easy to make. For this recipe, you’ll just need a few ingredients.

-3 Russett Potatoes

-Cheddar Cheese

-Green onions

-Bacon Bits

-Salt/Pepper

-Sour Cream

Start out by slicing the potatoes into 1/2-inch-thick circles. Soak the potatoes in cold water for about 30 minutes then pat dry.

Preheat the oven to 350 degrees.

Toss the potatoes with olive oil, salt and pepper. Place potatoes on a baking tray and bake for 20 minutes at 350 degrees.

Flip the potatoes over and bake for another 10 minutes.

Top the potatoes with cheese and return to the oven for another 5 minutes or until the cheese has melted.

Top with green onions and bacon and serve the loaded baked potato bites with sour cream for dipping.

Ingredients
  

  • 3 Russett Potatoes medium sized
  • 1 Cup Cheddar Cheese shredded
  • 1/4 Cup Green Onions sliced
  • 1/4 Cup Bacon Bits
  • 1 Cup Sour Cream for serving
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 TBSP Olive Oil
