Strawberry Oat Bars

Ingredients

For the Oat Crust:

  • 1 1/2 Cups Oats
  • 1 1/2 Cups Flour
  • 1/3 Cup Brown Sugar
  • 1/2 Cup Honey
  • 7 TBSP Butter melted
  • 1 tsp Cinnamon

For the Strawberry Filling:

  • 3 Cups Strawberries sliced
  • 1 TBSP Flour
  • 1 TBSP Lemon Juice
  • 1 tsp Vanilla
  • 1 TBSP Brown Sugar

Instructions

  • Preheat the oven to 350 degrees and line the bottom of an 8x8 pan with parchment paper.
  • To prepare the crust, add the oats, flour, brown sugar, cinnamon, melted butter and honey to a large bowl and mix well. Set aside about 1/3 of the mixture for the topping.
  • Add the oat mixture to the prepared pan and press down evenly to create the crust.
  • To a separate bowl, add the sliced strawberries, brown sugar, lemon juice, flour and vanilla and stir to combine.
  • Spread the strawberry mixture evenly over the oat crust and sprinkle the remaining oat mixture over the top.
  • Bake the strawberry oat bars at 350 degrees for 50 minutes.
  • Allow the bars to cool before slicing and serving.
