Crock Pot Beef Tacos

Equipment

  • Crock Pot or Slow Cooker

Ingredients

  • 1 Chuck Roast 3-4 pounds
  • 1/2 Cup Orange Juice
  • 1/4 Cup Lime Juice
  • 2 Cups Beef or Chicken Broth
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 2 TBSP Olive Oil
  • Diced Onion for serving
  • Cilantro for serving
  • Corn Tortillas for serving

Instructions

  • Season the chuck roast with half of the seasonings.
  • Heat a pan over medium-high heat and add the olive oil.
  • Sear the chuck roast for 2-3 minutes per side.
  • Add the orange juice, lime juice, broth and remaining seasonings, to the crock pot and mix well, then add the chuck roast.
  • Cook on low for 8 hours or until tender.
  • Remove the roast and shred it with a fork before adding it back to the crock pot.
  • Assemble the tacos with corn tortillas and your favorite toppings. Pro tip: you can use the remaining liquid from the crock pot to dip the tacos in.
