Ingredients

  • 3-4 Ripe Bananas
  • 1 Egg
  • 1/3 Cup Butter melted
  • 1 tsp Vanilla Extract
  • 3/4 Cup Sugar
  • 1 1/2 Cup Flour
  • 1/4 tsp Salt
  • 1 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1 1/2 Cup Mini Chocolate Chips

Instructions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, mash the bananas with a fork.
  • Add the melted butter, egg, vanilla and sugar and stir until combined.
  • Gently mix in the flour, baking soda, salt and cinnamon if using and mix well.
  • Carefully fold in the chocolate chips.
  • Pour the batter into a greased mini muffin pan and top with extra chocolate chips if desired.
  • Bake at 350 degrees for 12-14 minutes. Makes 24 mini muffins.
