Preheat the oven to 350 degrees.
Cream the butter and sugar together then add the eggs, vanilla and sour cream.
Add in the flour, baking powder, and salt then mix well.
Using an ice cream scoop, add the batter to lined muffin pans. The cupcake liners should be about 2/3 of the way full.
Bake at 350 degrees for 20 minutes. If you insert a toothpick into the cupcakes, it should come out clean, that is how you will know the cupcakes are done.
