Quinoa and Chickpea Salad

A healthy and delicious quinoa and chickpea salad recipe. This salad is protein packed and a take on the famous salad that Jennifer Anniston loves to eat!

Ingredients
  

  • 1 Cup Quinoa dry
  • 2 Cups Vegetable Broth
  • 1 15 oz can Chickpeas drained
  • 1 Cucumber diced
  • 1/4 Cup Red Onion diced
  • 1/2 Cup Pistachios chopped
  • 1/2 Cup Parsley chopped
  • 1/4 Cup Green Onions Sliced
  • 1 Cup Feta
For the Dressing
  • 1/2 Cup Lemon Juice
  • 1 tsp Dijon Mustard
  • 1 TBSP Honey
  • 1/2 Cup Olive Oil

Method
 

  1. Prepare the quinoa according to the package instructions; I like to use my instant pot for this step. Cook on high pressure for 2 minutes then let the pressure release naturally for 10 minutes before releasing the remaining pressure.
  2. While the quinoa is cooking, prepare the remaining ingredients and the dressing.
  3. Combine all of the ingredients in a large bowl and mix well.
  4. Serve and enjoy!
