Homemade Gumbo Recipe

Ingredients

For the Gumbo:

  • 1 lb Andouille Sausage sliced
  • 1 1/2 lb Chicken Breast diced
  • 1 Cup Vegetable Oil
  • 7 Cups Chicken Broth or Vegetable Broth
  • 1 Red Bell Pepper diced
  • 1 Green Bell Pepper diced
  • 3 Celery Stalks sliced
  • 1 Yellow Onion diced
  • 4 Cloves Garlic minced
  • 1 Cup Flour
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Cajun Seasoning plus more for seasoning the chicken and sausage
  • 2 Bay Leaves

For Serving:

  • 3 Green Onions sliced; for garnish
  • 2 Cups Cooked Rice for serving

Instructions

  • Prepare the vegetable by slicing, dicing and mincing them.
  • Dice the chicken and slice the sausage and season with Cajun seasoning.
  • Heat a large pot or Dutch oven over medium-high heat. Add the vegetable oil to the pot and then the flour. Stir to combine. Continue to stir often while the roux cooks over the next 30-45 minutes. Allow the roux to brown, this will give the gumbo its delicious rich flavor.
  • Add in the vegetables along with the remaining ingredients and stir.
  • Bring the gumbo to a boil then reduce to a simmer and allow it to cook for 20-30 minutes.
  • Serve with rice and bread and enjoy!
