Ingredients

For the Gumbo:
  • 1 lb Andouille Sausage sliced
  • 1 1/2 lb Chicken Breast diced
  • 1 Cup Vegetable Oil
  • 7 Cups Chicken Broth or Vegetable Broth
  • 1 Red Bell Pepper diced
  • 1 Green Bell Pepper diced
  • 3 Celery Stalks sliced
  • 1 Yellow Onion diced
  • 4 Cloves Garlic minced
  • 1 Cup Flour
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Cajun Seasoning plus more for seasoning the chicken and sausage
  • 2 Bay Leaves
For Serving:
  • 3 Green Onions sliced; for garnish
  • 2 Cups Cooked Rice for serving

Method

  1. Prepare the vegetable by slicing, dicing and mincing them.
  2. Dice the chicken and slice the sausage and season with Cajun seasoning.
  3. Heat a large pot or Dutch oven over medium-high heat. Add the vegetable oil to the pot and then the flour. Stir to combine. Continue to stir often while the roux cooks over the next 30-45 minutes. Allow the roux to brown, this will give the gumbo its delicious rich flavor.
  4. Add in the vegetables along with the remaining ingredients and stir.
  5. Bring the gumbo to a boil then reduce to a simmer and allow it to cook for 20-30 minutes.
  6. Serve with rice and bread and enjoy!
