Prepare the vegetable by slicing, dicing and mincing them.
Dice the chicken and slice the sausage and season with Cajun seasoning.
Heat a large pot or Dutch oven over medium-high heat. Add the vegetable oil to the pot and then the flour. Stir to combine. Continue to stir often while the roux cooks over the next 30-45 minutes. Allow the roux to brown, this will give the gumbo its delicious rich flavor.
Add in the vegetables along with the remaining ingredients and stir.
Bring the gumbo to a boil then reduce to a simmer and allow it to cook for 20-30 minutes.
Serve with rice and bread and enjoy!
