Green Chile Cheese Fries

These Green Chile Cheese Fries combine three of my favorite things, crispy French fries, cheese and my famous Green Chile.

Ingredients
  

  • 3 Cups Green Chile
  • 5 lbs Potatoes sliced
  • 2 Cups Cheddar Cheese shredded
  • Vegetable Oil for frying

Method
 

  1. Slice the potatoes into thin fry-like strips. Soak the potatoes in cold water for 45 minutes to 1 hour.
  2. When you're ready to fry the potatoes, preheat a pot of oil to 350 degrees.
  3. Pat the potatoes dry and fry them for 5-6 minutes at 350 degrees until light brown.
  4. Carefully remove the French fries and allow them to drain on a paper towel and season with salt.
  5. Place the fries onto a plate, top with Green Chile and cheese then place under a broiler for 2-3 minutes to melt the cheese.
  6. Top with cilantro and serve!
